Katie Tolbert, DVM, PhD, DACVIM

Dr. Katie Tolbert is a Clinical Associate Professor at Texas A&M University (TAMU). She completed a Small Animal Internal Medicine residency and earned a PhD in Comparative Biomedical Sciences at North Carolina State University, with board certification in 2010 and her PhD in 2013. Prior to joining TAMU, she served on the faculty at the University of Tennessee College of Veterinary Medicine. Dr. Tolbert’s research focuses on small animal nutrition and gastroenterology, and she has published more than 60 peer-reviewed manuscripts.

Ashley Self, LVT, MS, VTS-nutrition

Ashley Self is a licensed veterinary nurse specializing in nutrition and currently serves as Assistant Director of Veterinary Nutrition. She previously worked on the Nutrition Service at the University of Tennessee from 2012 to 2024 and earned her Veterinary Technician Specialty in Nutrition in 2018. Ashley completed her master’s degree in animal science with a focus on equine nutrition in 2023. Her professional interests include gastrointestinal disease, critical care nutrition, and chronic kidney disease.
